The glory of lunch

Lunch is by far my favorite meal of the day - always has been, don’t know why.  Week day and weekend alike - alone or with co-workers/family/friends - lunch is my thing.  Even when I’m home alone, I set the table, prepare a meal, and enjoy my lunch.  Today I had a hankering for hummus….homemade hummus to be exact.  This is not something I have ever made before so I decided to throw a few items into the blender and see what came out……..

  • Chickpeas
  • Olive Oil
  • Oregano (fresh from our garden)
  • Red pepper flakes
  • Sesame seeds
  • lemon juice
  • Frank’s Red Hot Sauce
  • 3 small cloves of garlic
  • Prepared Horseradish
  • Salt

Not bad - not perfect, but a good first attempt.  Wally harvested some large lettuce leaves, I spread the hummus on them, sliced up a cucumber we had just picked up from the farmer’s market, and rolled it up like a wrap.  I only wish I had taken pictures of the leafy wraps before we dined.

This article from http://eatdrinkbetter.com is specifically about strawberries, but it applies to all fruits, vegetables, and believe it or not beef, bison and poultry.  

I used to like carrots.  Back in my days of conglomerate grocery store shopping, when I thought I was being “healthy” by buying those adorable packaged baby carrots, I liked carrots.  Turns out, a carrot is not a carrot is not a carrot.  

I was amazed to learn to that there are several hundred varieties of carrots with well over 50 different seeds generally available.  (http://www.carrotmuseum.co.uk/today.html)  Not all carrots taste the same.  Turns out - I do like carrots, not just all of the varieties of them.

Flavor is not the only sacrifice being offered up.  How about knowledge and freedom of choice?  Yes, there is nutrition also but by now I’m assuming the person that is reading this already knows that.  What we are losing is knowledge of seasons, knowledge that not all carrots are orange, and knowledge of taste.  We’ve lost the freedom to choose what color/flavor of carrot we want to eat, or to serve to our family and friends.  When it comes to finding healthy food in the grocery store, we’ve lost.
